Abstract

Purpose

This research aims to explore the shopping behaviour and needs and wants of the over 55s market. Retail spaces have been most concerned with targeting the young, but the growing importance of the older segment now dictates that retail environments must increasingly communicate with older shoppers.

Design/methodology/approach

Semi‐structured interviews were conducted with senior executives from the retail property industry. Focus groups were conducted with older shoppers to explore their perceived needs and wants.

Findings

Key findings include the need to use “perceived age” rather than chronological age in determining marketing strategies. The importance of shopping as a means of socialisation and a leisure pursuit was emphasised by older consumers and that they see themselves as experienced, astute shoppers who seek quality and service.

Research limitations/implications

The heterogeneity of the mature market was highlighted; outlook and lifestyles of older consumers are likely to continue to change with successive generations. This indicates the need for continued research in this field to fully understand the needs and wants of a diverse and important market segment.

Practical implications

Findings are evaluated in the context of previous research to draw out implications and potential actions points for the retail and shopping place industry, specifically to create aspirational shopping spaces for older shoppers and use targeted brand management to communicate effectively.

Originality/value

The paper provides insights into the needs and wants of older shoppers and highlights that while this group values the shopping environment for social and leisure usage, retailers and shopping places needs to better understand and tailor their offer to benefit from the growing importance of the older shopper.

Abstract

Decentralisation of many food retailers to edge‐of‐town and out‐of‐town locations has resulted in some older people experiencing difficulty in accessing food shops and those experiencing the greatest difficulties in food shopping are considered to be at the greatest nutritional risk. The present study examines how and to what extent usage of, and physical access to food shops might influence dietary variety. Shopping behaviour and dietary variety are investigated using focus groups, a consumer questionnaire and a food frequency questionnaire (FFQ). A dietary variety score system, developed from the FFQ, is employed in this study. Neither usage of (particular) food shops nor basic accessibility variables are found to have a direct effect on dietary variety. Yet, coping strategies employed by older consumers to obtain food are revealed to be important. This suggests that more complex access factors remain an important issue for study in relation to the shopping experience of a proportion of the older population.

Abstract

Purpose

The purpose of this research is to show the evaluation of food hygiene knowledge and self‐reported behaviours of school children, assessment of children's attitudes towards food hygiene and evaluation of barriers to the adoption of appropriate food hygiene behaviours.

Design/methodology/approach

The food hygiene knowledge and self‐reported behaviours of pupils (4 and 14 years; Key Stages 1‐3 in the English system – or Scottish equivalent) were determined using age‐appropriate knowledge quizzes completed by 2,259 pupils across England, Scotland, Northern Ireland and Wales. Attitudes towards food hygiene and barriers to performing desirable hygiene‐related behaviours were established through semi‐structured interviews with 82 pupils who completed knowledge tasks in South East England.

Findings

Children generally had good knowledge of food hygiene. However, there were misconceptions about the nature of micro‐organisms and how they affect food. In addition, a lack of reminders and practical food activities, especially at Key Stage 2 (7‐11 years), coupled with poor hand‐washing facilities, meant that children did not always adopt desirable behaviours. Children gave suggestions for ways to help others to remember good practice.

Originality/value

The study identified areas of weakness in pupils' hygiene knowledge and understanding and has determined barriers to adoption of desirable behaviours at all times. It has also suggested ways in which food hygiene education could be made more engaging for pupils, and other methods to encourage good practice.

Purpose

In the home help service, food provision is one common welfare service that involves different professionals at different levels within a social organisation. The purpose of this paper is to examine how different professionals involved in this sector view and describe their work and responsibilities.

Design/methodology/approach

A qualitative study was designed based on interviews with 17 professionals representing different positions in the organisation, and an inductive thematic analysis was carried out.

Findings

The various professionals’ views of food provision mainly focus on the meal box and other meals seem to receive much less attention. The professionals also illuminated their respective roles within the food provision organisation by means of boundaries and split responsibilities, and expressed a view of food provision as an issue for outsourcing. The restricted manner in which food provision was viewed and described illuminates a risk of food insecurity for dependent people in home help service situations.

Abstract

Purpose

The aim of this study is to investigate older people's perceptions, across eight European countries (the UK, Denmark, Germany, Poland, Portugal, Spain, Sweden and Italy), towards functional foods.

Design/methodology/approach

The repertory grid method was used to elicit reasons underlying preferences of five yoghurts with different functional properties and two conventional ones.

Findings

Familiarity was the key driver in products' separation. For the Italian case, as well as the Spanish, Portuguese, Danish and Swedish the first principal axis could be interpreted as novel‐common axis, whilst it was not in the UK, Germany and Poland.

Research limitations/implications

Behavioural intention to buy functional yoghurts was more strongly predicted and moderated by single item perceived need (PN) than single item affective and/or cognitive attitude (AA, CA), even though PN, AA and CA could be consistently assessed within the same latent measure (in all countries but Denmark). Nevertheless, beliefs/attitudes towards a novel category of products such as functional foods may be reasonably keeping moving.

Originality/value

In this study, preference instructions pertaining to beneficial and imagery attributes, revealed idiosyncratic properties associated with functional yoghurts across eight European samples of older people.

Abstract

Purpose

The purpose of this research is to show how a nation‐wide survey of teachers investigated the teaching of food hygiene in primary schools. The survey determined which information sources were known and used by those responsible for teaching food hygiene.

Design/methodology/approach

Postal questionnaires were distributed to 3,806 primary schools throughout the UK (response rate 23 per cent). The questionnaire was developed based on the results of in‐depth interviews with school teachers and included topics such as where teachers gained up‐to‐date food hygiene messages, methods used to teach food hygiene, and how key food hygiene messages are reinforced. Teachers cited most preferred resources for teaching food hygiene, influences on the choice of these resources, and limitations on use.

Findings

Overall, the results indicated that food hygiene is taught in a number of subject areas, with handwashing and personal hygiene being the principal topics. Teachers use a combination of methods to teach food hygiene and to reinforce food safety messages. The principal limitations of teaching this topic were identified as a lack of suitable space and curriculum time. Teachers across the UK also identified new resources that would support the teaching of food hygiene.

Originality/value

The study identified how primary school teachers deliver food hygiene messages through the curriculum, daily routines and whole school initiatives. Ways in which primary school teachers could be supported when delivering food hygiene education have been suggested.

Abstract

This paper examines the attempts to create new online markets for the trading of wholesale standardized goods during the late 1990s. The vast majority of these business-to-business (“B2B”) exchanges failed. These failed attempts provide invaluable data on the necessary underpinnings of online commodity markets and the social dynamics that drive them. Focusing on the US market for propane as our case, we discuss the model that drove the development of many business-to-business exchanges, the social dynamics of the propane industry and the attempts to create an online propane market, the role of informal risk management, and some initial lessons about the design of markets. Ignoring the behavioral realities of markets led to designs and technology that in many cases were incompatible with the needs of market participants.

Abstract

The equation of unified knowledge says that S = f (A,P) which means that the practical solution to a given problem is a function of the existing, empirical, actual realities and the future, potential, best possible conditions of general stable equilibrium which both pure and practical reason, exhaustive in the Kantian sense, show as being within the realm of potential realities beyond any doubt. The first classical revolution in economic thinking, included in factor “P” of the equation, conceived the economic and financial problems in terms of a model of ideal conditions of stable equilibrium but neglected the full consideration of the existing, actual conditions. That is the main reason why, in the end, it failed. The second modern revolution, included in factor “A” of the equation, conceived the economic and financial problems in terms of the existing, actual conditions, usually in disequilibrium or unstable equilibrium (in case of stagnation) and neglected the sense of right direction expressed in factor “P” or the realization of general, stable equilibrium. That is the main reason why the modern revolution failed in the past and is failing in front of our eyes in the present. The equation of unified knowledge, perceived as a sui generis synthesis between classical and modern thinking has been applied rigorously and systematically in writing the enclosed American‐British economic, monetary, financial and social stabilization plans. In the final analysis, a new economic philosophy, based on a synthesis between classical and modern thinking, called here the new economics of unified knowledge, is applied to solve the malaise of the twentieth century which resulted from a confusion between thinking in terms of stable equilibrium on the one hand and disequilibrium or unstable equilibrium on the other.

The Hebrews of old were promised a land “flowing with milk and honey,” a description which, in the opinion of the biblical writer, expressed every desirable quality. Many excellent persons consider that we are the Lost Ten Tribes. If that be so we have little reason in certain respects to congratulate ourselves on change of habitat; with regard to milk the opinion of the British Medical Association is worth consulting, as well as a perusal of current police court proceedings. With regard to honey there is well known classical as well as scriptural authority which is justification for the belief that honey as a naturally formed substance is a wholesome food. This belief, fortified to some extent by experience, is undoubtedly held by the ordinary purchaser and consumer of honey. Whether at breakfast or at tea in dining room or nursery—especially the latter—he expects to get a liquid with a characteristic taste and smell primarily obtained by bees from the nectaries of flowers. Like all foods it is a complex with chemical constituents and physical properties varying between certain limits. It has a dietetic value of its own. There is no substitute for it. The mel depuratum of the British Pharmacopœia is also assumed to be genuine honey, not materially changed in nature, substance, or quality by the treatment it receives as a preliminary to its introduction as a constituent of various pharmaceutical preparations. It may be reasonably assumed that this conception of what honey is or should be is held by members of the medical profession, by pharmacists, and by students of dietetics alike. It is impossible to imagine that any of these would seriously think that any artificial product could adequately replace honey. Yet so‐called honey substitutes have been on the market for years past and are still sold. With some vague implication—usually expressed in small print on a label—that it is not the genuine thing. This as a rule conveys little or nothing to the mind of the housewife who, buying it in a closed glass container, is guided by the colour and also influenced by the price of her purchase. Taste and smell being excluded under the conditions of the ordinary “over the counter purchase,” she is left to discover its other virtues when it appears on the family meal table. The Ministry of Food seems to give an implied sanction to this form of commercial enterprise by defining the term “imitation honey” (The Sugar and Preserves (Rationing) Order, 1945) as meaning “any manufactured product, whether containing honey or not, which is made up to resemble honey in appearance, consistency and flavour.” It is unfortunate that imitation honey should be officially acknowledged as a legitimate trade product, for it is surely no more a substitute for the genuine product of the hive than is a faked half‐crown for the real thing. The sale of imitation “honey,” which may contain no honey at all, is a matter in which the demands of public health and fair dealing should receive priority over trade expediency. Nor is it easy to see how the delicate and characteristic flavour of honey is to be successfully imitated. It has been said that food manufacture is more and more assuming the character of a branch of industrial chemistry. Imitation honey is surely an exemplification of that statement if for the moment it be regarded as a food. We are, however, by no means inclined to think of it as anything of the kind. It may not be positively harmful, but in our submission a genuine food consumed under ordinary circumstances by the normal person is and must be positively good. The alleged value of this stuff cannot be expressed in terms of merely negative qualities. On the contrary, it is pretty effectively damned by them. It is in fact mere gut lumber of no dietetic value. In addition to this, it would seem to have a fairly wide and perhaps an increasing sale. At the present time everyone who can do so is being very rightly urged to grow more food in personal and in national interests. There seem to be few indications that the present state of things will be bettered in the near future. Allotment holders and smallholders are being increasingly recognised as important contributors, within their limits, to the national food supply. Honey is a food. It should form a cheap and wholesome addition to the ordinary meal. Bee‐keeping is not only well within the range of the small‐holder's activities, but seems in many ways to be peculiarly adapted thereto. Many organisations, official and otherwise, exist with the avowed object of instructing allotment holders and smallholders how to keep bees, and encouraging them to do so. A ready market will be a measure of their success. We believe that such a market exists and that it would grow if people were assured that a supply of home‐made honey at a reasonable cost could be had. The interests of neither producer nor consumer are served by a market in process of being glutted by imitations masquerading as substitutes for the real thing.
